The Celtic stuff is lost and/or buried for the most part -- what survives -- ie-- "Sir Gawain and the Green Knight" seems fairly disconnected from the probable myths and legends that gave rise to SGATGG (or pumpkinhead) as we know it.
Keep digging and you'll likely find snippets here and there which could send you toward what you're looking for. If you want to start off with Celtic stuff, try Herne.... master of the hunt. That would be my best guess for a Celtic origin for "pumpkinhead" per se...
